Dinner at Signal, Cape Grace

Hundreds of years ago, sailors braved high seas and unchartered territories to introduce the world to the wonders of fragrant herbs and spices. In our own way, that’s what we do at Signal in Cape Grace. We invite you to plot a culinary course over the Cape’s ancestral landscape, tasting flavours and ingredients encompassing responsible and sustainable food practices and dishes crossing worldwide borders.

Food and Wine Pairing Menus are going to be a strong feature at Cape Grace in 2014, and this January we continue our association with Plaisir de Merle by matching each dish on the Tasting Menu with one of their wines. Here’s the menu to tempt you:

lemongrass-scented shellfish velouté, poached crayfish, smoked mussels, fresh tomato seeds

Plaisir de Merle Grand Brut 2010

confit pork belly, seared scallop, vanilla parsnip purée and sauce vierge

Plaisir de Merle Sauvignon Blanc 2013

pineapple curry leaf sorbet, compressed pineapple citrus foam and toasted coriander seeds

biltong-cured ostrich, rooibos-scented apricot compote, bitter chocolate and goats cheese truffles

Plaisir de Merle Cabernet Sauvignon 2010

shitake-glazed beef fillet, olive-braised potato, cauliflower purée, grilled asparagus and mushroom crumble

Plaisir de Merle Malbec 2010

Chilled passion fruit soufflé, coconut lime sponge, litchi glass and mango sorbet

Plaisir de Merle Chardonnay 2012
